CHARLESTON, S.C. (WCBD) - After 15 years of navigating her life with celiac disease, Renee Dilorenzo is opening a 100% gluten-free food truck called Gluten Free Gourmet Hub.
After her celiac diagnosis, Dilorenzo was shocked by the lack of gluten-free options at the time. "A lot of food tasted like cardboard," she said. "It wasn't very accessible, and it was very expensive. Being in a military family on a tight budget, I had to get creative," Dilorenzo explains.
Dilorenzo comes from an Italian family, and "making my gluten-free pasta was one of the great motivations I had to start tweaking our favorite gluten-free recipes. That grew, and I started feeding family, friends, and it took off from there," said Dilorenzo.
