Inever throw away an overripe banana. I peel it, freeze it and pull it out whenever I get a hankering for banana bread or want to make a lunchtime smoothie .

Over the past several months, I’ve developed quite a banana backlog, with a dozen individually bagged bananas spilling out of a side compartment and onto the floor whenever I open the freezer. I needed to end this banana insanity (bananity?) with a recipe that would use many, many bananas. I decided to make banana “ice cream.”
