Ingredients:
6 oz. semi-sweet chocolate, grated
2 cups flour
1/2 tsp baking powder
1 tsp salt
4 tsp instant coffee
3 eggs
1 1/4 cup sugar
2/3 cup margarine
2/3 cup cold water
1 tsp vanilla extract
Directions:
Preheat oven to 350 F.
In a large bowl, mix the flour, baking powder, salt and coffee.
In a stand mixer, beat the eggs, sugar and margarine.
Alternate mixing in the dry ingredients and the cold water.
Add the vanilla. Stir in the grated chocolate.
Pour the batter into a loaf pan and bake for 45-50 minutes OR
pour into muffin tins and bake for 20 minutes. ■
