With six minutes on the clock, Riverside High School’s offensive linemen dove into double tortilla, loaded carne asada tacos, the last of 10 schools to compete in Mijos Tacos’ Tacos in the Trenches Tournament.

Derek Elmendorff, a former UTEP and Franklin High School football player, conceived the idea for the taco-eating contest a few weeks before the first school competed.

"What we say is we know two things food and football," said Elmendorff, "and so we collaborated on those two ideas."

He and the Mijos Tacos team, Will Hernandez, Tony Elmendorff, Josh Ortega, Devin Lopez, Robert Galvez, David Montoya, and Lorraine Beltran, wanted to give the big guys on football teams the spotlight for once, while also promoting the newly opened Mijos Tacos food truck, co-founded by Arizona Cardinals
