Smoked Sausage & Potato Hash with Peppers & Onions • 1 lb smoked sausage, sliced into ½-inch rounds • 3 medium red potatoes, skins on • 1 red bell pepper, diced • 1 green bell pepper, diced • 1 medium onion, diced • 2 tbsp olive oil (or neutral oil) • 1 tbsp butter • 2 cloves garlic, minced • 1 tsp smoked paprika • Salt & black pepper, to taste • Fresh parsley, chopped (for garnish)
