A man has been charged after being stopped in a dramatic pursuit of an allegedly stolen food truck along the Bruce Highway in Queensland.

The small pantech truck was stopped more than three hours after being driven from Brisbane to where it eventually came to a halt on the highway on Wednesday.

Police will allege the truck was stolen from Elizabeth Street at about 10.15am, a Queensland Police Service statement said.

The vehicle was tracked north on the highway and a tyre deflation device was deployed in the Sunshine coast area, the statement read.

A male driver was the arrested at 1.53pm after the vehicle came to a stop near Canterwood Road at Owanyilla.
