TAOS — Plans are in the works for the much-anticipated — and delayed — Matanza meat processing facility north of Taos to be a U.S. Department of Agriculture-certified and New Mexico Grown-certified wholesale supplier.

The plant, which has been under discussion for 2023, would be able to purchase animals and sell local beef product in addition to slaughtering livestock for small-scale ranchers who sell directly to consumers. The Taos County Economic Development Corporation announced details of a buying/contracting program at a community meeting on Sept. 3.

Once operational, the facility will offer multiple business solutions for local ranchers in an attempt to support regenerative agriculture and capture economic "leakage," keeping more profit, jobs and food in the local economy.
