Two words describe these protein-packed crackers: Insanely addictive.

Preheat oven to 300°F—ideally on convection setting.

In a large bowl, combine seeds and arrowroot. Mix thoroughly. Add olive oil and mix thoroughly. Add a generous amount of salt and pepper as well as any optional spices of your choosing. Add water and mix thoroughly, then let rest for a minute.

Cut two sheets of parchment paper the size of the inside of your sheet pan.

After the seed mixture has rested, set the first piece of parchment paper on a solid, flat countertop, and spoon the seed mixture onto the center. Cover with the second sheet of parchment, then use the rolling pin to spread the mixture out evenly over the whole sheet. The goal is to get a thin even layer that is the thickness of a single pumpkin seed.
