Ilove goulash, a rich meat and vegetable stew.

When I first started to make this dish – many years ago – I would use premium stewing beef that required a long and slow braise.

Wanting to recreate this dish, but with a more budget friendly approach and to make it faster, I decided to try it with lean ground beef.

While the texture was totally different, it still resulted in a rich, satisfying flavour thanks to all the other typical ingredients such as onions, peppers, tomatoes and paprika.

You can serve this comforting dish with mashed potatoes or on buttered egg noodles. And don’t forget to add a dollop of sour cream on top.
