The classic Aussie jaffle iron has led to an Australian food stylist winning an international prize for porridge making in Scotland.

Caroline Velik from Melbourne claimed the title of "best specialty dish" at the Golden Spurtle World Porridge Making Championship on October 4 in the Highlands village of Carrbridge.

Ms Velik used the classic Australian invention to craft the winning recipe with a nod to her mother's nostalgic rum banana recipe.

"A jaffle Iron? You've made that up," the competition host, Scottish MasterChef finalist Sarah Rankin, quipped after asking about the contraptions.

The recipe was a yogurt flatbread filled with her mother's rum bananas, featuring native ingredients of Davidson plum and wattleseed extract, all brought together with Bundaberg banana toffee rum liq
