MT regularly says I make complicated dishes while she keeps it simple. Hey, I can cook easy, and if this doesn’t prove it, I’ll have to resort to writing about buttering toast.

Truth is, I felt this seemed so simple I hesitated to use it for a test kitchen installment. C’mon, cut up a tomato or two and a cucumber (cuke), mix some oil and vinegar, season with salt and pepper, et voilà! The only “test” seemed to be of my slicing/whisking skills. And as far as whether it would taste good, unless you are anti-fresh veg, what’s not to like?

“It’s delicious, honey,” MT gushed. “It’s delightfully refreshing.”

I agree completely, but with fresh tomatoes from our garden as the star (or at least, co-star), that was a given.
