The arrival of the Spring Racing Carnival signals the start of the champagne and sparkling wine season Down Under.

The sound of popping corks continues through Melbourne Cup week to Christmas Day, and all the way to New Year’s Eve, says Ed Carr, the creator of Australia’s most prestigious sparkling wines under the House of Arras brand.

This year’s vintage is Mr Carr’s 30th at House of Arras. I'll drink to that.

Mr Carr is the “quietly spoken genius” of Australian winemaking, says leading wine scribe and judge, James Halliday.

The new releases include House of Arras Grand Vintage 2017, House of Arras Blanc de Blancs 2017, and House of Arras Vintage Rosé 2017.

And to commemorate his three decades at the helm, the collection also features the E.J Carr Late Disgorged Special Release 2006,
