MELBOURNE, Fla. — In this week’s Chef’s Kitchen, we’re on the Space Coast to explore flavors of the unexpected — Northern Lebanese cuisine.
Toni Elkhouri is the chef and owner of Cedar’s Café in Melbourne. She has been operating her business for 21 years, striving to give her guests an “adventurous experience” with each visit.
“Let’s just open up your mind of what food should be,” she said with a smile, while opening a bottle of wine.
Her family is from Lebanon, but Elkhouri grew up on the Space Coast. She is well traveled and cherishes her heritage; eager to share its history with new and returning guests.
Her use of food scraps is unmatched. “We need to use every piece that we pay for!”
