Ingredients

Chocolate ice cream

375ml thickened cream 25g cocoa powder 135g caster sugar Pinch of sea salt 85g dark chocolate, chopped 375ml full cream milk 2 tsp vanilla extract

Caramel whiskey sauce

250g caster sugar 80ml water 150ml thickened cream 50g butter

2 tbs whiskey

Chocolate souffles

110g caster sugar, plus extra for coating 40g butter, plus extra for greasing 2 tbs plain flour 250ml milk 200g dark chocolate

¼ tsp salt 1 tsp vanilla extract 2 egg yolks, lightly whisked 4 egg whites

Sifted icing sugar, to dust

Method

1. To make ice cream, whisk cream, cocoa powder, sugar and salt in a medium saucepan until smooth.

2. Place over medium heat and bring to a gentle boil, whisking occasionally. Reduce heat and simmer for 30 seconds.
