Pavlova is the answer for a showstopper sweet without worrying about perfection.
“Despite its elegant appearance, the recipe is surprisingly easy to make and requires only a few basic ingredients. And its imperfections, like cracks in the shell, are part of the dessert’s rustic charm," says Romina Peixoto , who is the pastry chef at Sweet Graffiti dessert shop in New York City.
Peixoto's version makes eight personal-sized treats topped with tangy curd and your choice of sugared cranberries, cream and mint. “Pavlova has a crisp exterior, while the inside has a soft, almost marshmallow-like texture. This particular pavlova combines the flavors of a tangy citrus mix with sweet, rich and creamy elements,” she says.
