AKRON, Ohio – A few years ago, Rachel Balko had an epiphany for a major life change.
Balko, who worked in New York City in musical theater, had moved back to Northeast Ohio with her family.
“My husband and I both remember this vividly,” she said. “I was sitting on our couch in Ohio City and had just had my son, who was two months old. I was teaching voice and didn’t want to go back after my maternity leave. I enjoyed teaching voice and I was good at it, but it’s not where my heart is. I was wracking my brain to figure what else I could do.”
She started West Side Charcuterie, which has expanded to a brick and mortar business, Constance Fromagerie & Café, which opened Nov. 8 in Akron’s Pilgrim Square.
