CARBONDALE, Ill. (WSIL) – Thanksgiving is just two days away, and volunteers at the Newman Catholic Student Center in Carbondale are busy preparing for one of the community's largest holiday meals.
Crews spent the day chopping vegetables, assembling 32 pans of dressing, and making cranberry relish.
"The Knights of Columbus from up around Clinton County bring all the turkeys, they cook them and debone them and have them pans and all we have to do is put them in the oven on Thursday morning," JP Dunn, the Thanksgiving meal coordinator, said.
Last year, the center served about 1,300 meals, and organizers expect even more this time.
More than 300 delivery requests have already been scheduled, including meals going to the Warming Center, the Empowerment Center, and Good Samaritan House.
