With Thanksgiving just a day away, we thought to share some recipes that are delicious, easy to prepare -- and healthy!

Today's recipe is a side dish: Hummus Mashed Potatoes. It's a perfect dish for those who may be looking for a lighter variation of this classic staple, yet do not want to forego the dish's creaminess.

Instead of using lots of milk (substitute with non-dairy milk to make it vegan), this recipe calls for hummus which lends the dish the creaminess we crave when indulging in homemade mashed potatoes -- right?
