(Undated) — University of Missouri Extension nutrition & health specialist Rachel O’Halloran says Thanksgiving is the perfect time to test out some food-waste prevention ideas. She’s leads Mizzou Extension’s “Freeze it” program , which has been expanding in rural Missouri. The program promotes practical food storage ideas in programs throughout the state. Thanksgiving can present some challenges for cooks preparing a large amount of food, as well as serving, cleaning up, and storing the left-overs. O’Halloran reminds cooks -no matter how distracted they may be by relatives and/or football on TV- to make sure food is put in the refrigerator or freezer after two hours or less.
