A new distillery and cocktail bar are opening in the former Hamm’s Brewing blacksmith shop on the East Side and infusing Twin Cities restaurant nostalgia into their decor and drink menus.
Volière Spirits distillery and its counterpart CrowBar, both founded and operated by ReGina Clapp and Liza Sterletske, are taking over the building on the Hamm’s campus most recently occupied by 11Wells Spirits, which closed last year. However, the duo have significantly rearranged and rebuilt much of the interior: The front door now faces nearby Saint Paul Brewing, and the bar and lounge are located in a vast but cozy brick-walled space that used to be storage. (The sunken laboratory-like room that was 11Wells’ bar is now the back-of-house kitchen.)
