Being at the helm of one of the UK's top restaurants that's Wales' only two Michelin star holder, has five AA Rosettes and you're an AA Chefs’ Chef of the Year, you'd think it would be time to bathe in the success and relax.

Not so for Gareth Ward, the 44-year-old chef from the north east who was offered the job at Ynyshir over a decade ago and whose first thought was "‘all the way over there? Not a chance, there is nothing there."
