Food is the third most basic human need, after air and water. Only when food is safe can it contribute to our health and food security. If a food is not safe, it is not a food.
Food safety is a discipline that helps prevent foods from containing substances that may harm human health. All people who produce, prepare, transport, store, prepare, serve and consume food must employ practices that maintain its safety.
Contaminants can enter food products through soil, water, air, or equipment used during production and processing. Improper storage of food, unhygienic handling, and transportation at the wrong temperature can all contribute to it becoming harmful. The consumer can also be the cause if he or she does not cook the food properly.
