I had the good fortune to travel to Portugal and the Basque region of northern Spain this year.

A wide variety of seafood and rice are common ingredients to recipes in both of these destinations. In many parts of Spain, paella is a much-loved rice dish.

I’ve also enjoyed renditions of seafood and rice that present more like a soup or very loose risotto.
