Living in Penticton, wildlife spotting mostly entails deer, rodents and prowling cats. Bird watching in my backyard has improved tenfold, due to my attempts at re-wilding the property.
But recently I was caught by surprise when a cottontail rabbit was spotted hopping amongst the plants. It appears in the early morning hours, surviving on what I have yet to discover -- but it got me thinking of carrots.
I call it a ‘what’s up, doc’ moment. Rabbits, in particular the mountain cottontail species found in the Okanagan, prefer leafy greens, twigs and herbs, and carrots are not a high priority on their dietary list. But they’re high on mine.
I eat them all year long, and the local varieties right now, sweet and tender, are in high demand. For any chef or home cook with a penchant for supporti
