GRAND RAPIDS, Mich. (WOOD) — For Saturday morning snackers and sweet tooths, nothing is better than a fresh pastry. One Eastown Grand Rapids baker isn’t flaking on the opportunity to meet the demands of a growing crowd. In fact, she embraces the challenge of scrapping and recreating a new menu of treats each week.

On a Saturday morning, a busy brunch crowd predictably packs Eastown. Around the corner, Anna Varchola is hard at work, conquering a full slate of pastry orders based on a menu she conceived of just days before.

“I call it your secret neighborhood bakery,” Varchola said.

Hence the name: Midnite Patisserie. Its hushed underground roots stem from a love of baking that Varchola honed in on during the pandemic, serving friends and neighbors from her living room window.
