1 tsp sorbet stabilizer

200g milk

100ml pear juice

6 cardamom pods

100g egg yolk

5g gelatine leaves

30g egg white

pinch salt

30g butter

40g icing sugar

30g plain flour

200g dark chocolate, melted

Chocolate & whiskey cream

250ml thickened cream

60g caster sugar

1 tbs cornflour

100g egg yolk

2 tsp whiskey

100g dark chocolate

Caramelized pear with whiskey

100g caster sugar

100g water

1 vanilla bean, seed scraped

6 cardamom pods

1 stick cinnamon

4 ripe pears, peeled, cut into 5mm dice

100ml whiskey

100ml pear Juice

To make pear and cardamom sorbet, place 400ml of the pear juice in a small saucepa
