T ruly, even in the world of midway munchies, there is no new thing under the sun.

Each year, the Tulsa State Fair includes on its website a list of “new foods” that will be available on the midway, or inside the SageNet Center.

Some years, the Expo Square fairgrounds, 4145 E. 21st St., are teeming with unusual, even unique choices for those who enjoy eating their way across the midway.

One could find a variation of the classic Spanish dish known as paella ; chunks of alligator meat interwoven on a skewer with a thick strip of bacon, the whole she-bang battered and deep fried; pizza slices topped with everything from scorpions and mealworms to slabs of Spam.
