Crispy corn? Yes. Grilled pineapple? Yes. Salsa Potato? Yes. Kebabs? Yes. Chats? Yes. These are some of the common items that greet diners at buffets, inviting them to eat as much as they want.
'All you can eat.' That is how buffets work. But then how do famous buffets such as BBQ Nation, The GT Road, and Pirates of Grill, with prices ranging from Rs 900-1400, make a profit serving unlimited food?
To answer this question, India Today spoke with Rajan Sethi, Managing Director of Bright Hospitality aka BHPL, whose company caters to 5,000 diners daily with award-winning spaces like Ikk Panjab, OMO Soul Food Community, and The GT Road.

"The idea is simple," says Rajan Sethi. "A fixed price draws people in, and when you serve enough guests, the averages balance o
