From the busy streets of Sydney, the Camilleri family was looking for a quieter life when they moved to Crookwell on the Southern Tablelands.

Instead, they launched into a paddock-to-plate business, Dandaraga Springs, with plenty of lessons along the way and pivoting was crucial to survival.

Daniel and Dora, along with children Thaddeus, Elyssia and Charlie, never planned to be running a butchery, or sending beef and lamb all around Australia, but that's exactly where they have found themselves.

"I ran a refrigeration business in Sydney for 18 years," Mr Camilleri said.

"We were operating the business in Sydney, but I've always been drawn to the land - even though I was born and bred there, I needed to get out of the place."
