250ml warm milk (35C) 2 tbs caster sugar

7g sachet dry yeast 450g self-raising flour

2 tbs vegetable oil

Extra vegetable oil, for brushing

Chicken marinade

3cm piece fresh ginger, grated 1 tbs light soy sauce 1 tbs dark soy sauce 1 tbs brown sugar 1 tbs fish sauce 2 tsp sesame oil 2 tsp rice vinegar

Sweet chilli sauce

250ml water 100g caster sugar 2 tbs tomato sauce 1 tbs white vinegar 1½ tbs chilli flakes 1 garlic clove, crushed 3 tbs cornflour, mixed with 2 tbs water

Kepie mayo

2 egg yolks 1 tbs lemon juice

1 tbs rice vinegar 2 tsp caster sugar 2 tsp
