When the whipped ice-cream machine broke at Kelly’s in Co Wexford this year, guests were devastated. The much-loved machine has been squeezing out soft serve for generations.

“We made sure it was back up and running in no time,” says Pauline Power of the Rosslare resort. “It’s a small but meaningful example of how tradition still matters deeply to our guests.”
