Those of us who love baking have been patiently waiting all year for this special season, a time when we share gratitude and affection through food. In the coming weeks, I’ll share some Eat Fit holiday recipes that also make great baked-goods gifts, including gluten-free and low-sugar options. Let’s start with one of my favorites: cranberry oat cookies.
This recipe was created by Judith Montalvo, manager of Fuel Café at Ochsner Fitness Center, and blends all the cozy flavors of the season — cinnamon, pumpkin spice and a pop of tart cranberry — into a naturally sweetened, gluten-free holiday treat.
Each cookie offers a nourishing mix of fiber-rich oats to support healthy digestion and blood sugar levels; plant-based fats from almond flour and pumpkin seeds; and polyphenols in cranberries
