Richard Ptacnik is the head chef at OTTO Sydney and with the restaurant celebrating its 25th birthday this year, he joined us on The Morning Show to cook one of his favourite dishes — a “ricotta, chocolate and orange cannoli”.

With a golden shell and a smooth ricotta filling, cannoli is one of the most delicious desserts.

Cannoli Dough

Ingredients

Flour — 300g

Caster sugar — 30g

Baking soda — 2g

Butter — 60g (cold, diced)

Egg yolks — 2 each

Marsala – 90ml

Method

1. In a large bowl, combine the flour, sugar, and baking soda.

2. Add the cold diced butter and rub it into the dry ingredients until the mixture resembles coarse crum
