What salt should I use?

Salt is an ingredient that truly enhances both sweet and savory dishes, bringing out flavor like no other. Salt can both balance recipes and preserve them — making it a versatile ingredient we should all have on hand.

Kosher salt is my go-to in most standard applications — like seasoning meat and vegetables — table salt when it comes to baking since it will dissolve better, and flake sea salt, my favorite is Maldon, for finishing touches to composed plates along with a sprinkle on top of a warm chocolate chip cookie. Truthfully, I add flaky salt to almost everything, even my toasted sourdough bread with butter in the morning.

Why do some recipes call for covering a dish with foil while baking and other times instruct you to keep the dish uncovered?
