It’s not ramen , and it’s not udon, it’s mazesoba!
A popular mazesoba chain restaurant has made its way to Edmonton this September. Kokoro Mazesoba is the world’s largest mazesoba chain, having launched in January 2014 in Tokyo and quickly expanding globally.
For those who aren’t familiar with mazesoba, we’ll give you the rundown.
Mazesoba is a Japanese brothless ramen, consisting of chewy noodles and a variety of toppings, usually including some meat and raw egg yolk. The restaurant describes the dish as an “umami-rich saucy noodle.”
This delicious meal is packed with flavour for days, and it’s the perfect way to begin the fall season.
