PORTLAND, Maine — Jordan Rubin, the chef behind Mr. Tuna in Portland, has been named one of Food & Wine’s Best New Chefs of 2025 .

Rubin, who operates a seasonal sushi food truck on Portland’s Eastern Promenade along with a sit-down sushi restaurant , was among 10 chefs nationwide honored in the magazine’s 37th class of Best New Chefs. Food & Wine said this year’s group reflects a new generation of chefs drawing on personal history, culture, and memory to shape inventive menus.

Earlier this year, Rubin was a semifinalist for a James Beard Award for Best Chef in the Northeast. Food & Wine also previously recognized Mr. Tuna as one of the top 15 restaurants in the United States in 2025.
