Stephen Waples got his start processing and butchering sheep in his home country of New Zealand, helping feed staff on farm.

"One of the first farms I was on, you had to get really good at doing the dog tuckers before you were allowed to do your own home kills, let alone a kill for somebody else," he said.

"It was great practice - at one stage we had about 36 dogs to feed, we were going through eight sheep a week.
