CLEVELAND HEIGHTS, Ohio — On The Rise Artisan Breads in Cleveland Heights will represent the United States at the prestigious Mondial du Pain in October, bringing Northeast Ohio craftsmanship and creativity to the world stage of bread baking.

Often called the “Olympics of bread baking,” the biennial competition in France gathers top bakers from around the globe to test their skills in traditional breads, viennoiserie and artistic creations. As Team USA, On the Rise will compete against teams from 20 other countries.

“Viennoiserie,” or “in the style of Vienna,” is how professional chefs describe yeast-leavened dough products between bread and pastry, like croissants and brioche.
