The coconut chiffon at Maprang Bakery & Cafe is hard to miss. The lime-green hue stands out among the assortment of croissants and mini pastries. It was recommended to me by the barista, who called it the shop’s signature pastry. Understandably so. The coconut chiffon combines decadence with simplicity, with delightful flavors in a shape reminiscent of a muffin but with a texture far more like angel food cake. Gooey, gelatinous pieces of coconut mix with the fluffy and sweet pandan cake, and it is instantly addictive. The pandan and coconut flavors provide a natural sweetness that never becomes overwhelming – not-too-sweet is a founding tenet at this shop opened in late 2023 in a long-empty video store space.
