LAS VEGAS (KLAS) — By day, Ethan Spiezer is a special education teacher. By night, he's running Solamente Pizza.
Solamente Pizza started as a hobby during the COVID-19 Pandemic. It's at 8390 W. Sahara Ave., between Durango Drive and Cimarron Road.
“I saw people literally crying, eating my pizzas, which is not something I had anticipated. I thought it was, like, a horrible thing,” Spiezer said. “I was like, ‘Oh my God, I'm so sorry, what's the matter?’ and they're like, ‘I can finally eat pizza that doesn't hurt my stomach,’ because we have a wholly, naturally leavened, long fermented dough that's just different than other places.”
While his pizza brings tears of joy to those with sensitive stomachs, the process of running a restaurant with no prior experience is not as easy to digest. S
