CAMPBELLSBURG, Ky. — Trips to the grocery store are becoming increasingly more expensive with the price of several staples on the rise. Among them, hamburger meat and steak.

It’s not just consumers who are feeling the impact of higher prices, but so are locally owned butcher shops.

“In this room we do all the breaking down of the carcass,” said John Edwards, co-owner of Trackside Butcher Shoppe in Campbellsburg.

This November, the butcher is celebrating 10 years of operation. With nearly 30 workers, it’s one of the largest employers in Henry County.

Edwards said prices right now are the highest he’s ever seen, which is affecting processors like him, who often deal directly with farmers and residents.
