Experts predict that around 320 million pounds of food will be wasted from Thanksgiving feasts this year, according to the nonprofit ReFED , and a local expert is offering tips to help New Mexicans celebrate a "green-minded" Thanksgiving.
The Rio Grande Chapter of the Sierra Club encourages New Mexicans to start with mindful shopping, suggesting the use of reusable plastic bags to avoid generating more plastic waste.
"The key is cooking only as much as you think you'll really eat," said Camilla Feibelman, who is the director of the Sierra Club Rio Grande Chapter.
