We had Thanksgiving at Molly and Eric’s this year and it was great! All the old family favorites except the string bean casserole which Molly hates. I made stuffing and Hanna brought an apple crisp, but the star of the evening was this incredible salad. It was the perfect contrast to the gravy-heavy turkey meal — sweet, salty, crunchy, fresh, cranberry-tart and garnished with Manchego cheese and crispy candied pepatos. We were still talking about it on Sunday and couldn’t wait to make it again. It would be a nice compliment to any kind of poultry or meat and with the addition of chicken “paillards”, (pounded thin chicken breasts) would make a nice weeknight dinner; light and fresh — prepared in under 40 minutes.
