A St. Thomas coffee roastery founded by two sisters from Nicaragua is creating a special blend to celebrate its 20th anniversary.
The Las Chicas Del Cafe blend also honours the memory of their father, Don Rey, as he was affectionately known, who died last December and was the inspiration for his daughters to create the business.
Valeria Fiallos-Soliman and Maria Fiallos immigrated to Canada from Nicaragua, leaving their family coffee farm La Union, in 1987.
In 2005, they created Las Chicas Del Cafe, (which in English translates to The Coffee Girls), after selling the family beans in Canada. When asked what inspired them to start their own business, the sisters cited a desire to roast the beans the way they deserved.
