Every Wednesday night, upscale Japanese spot Miru at the St. Regis is offering the opportunity to get an up-close look at the breakdown of a massive bluefin tuna . Preceding a multi-course tasting experience, Miru’s sushi chefs walk an intimate group of diners through the breakdown of the massive fish, which typically grows between 300 and 600 pounds.

The immersive experience concludes with a tasting of cuts ranging from lean to fatty, including dishes like tartare with otoro and uni on rice crisps, and crispy shiso with diced bluefin tuna and sesame vinaigrette. The tasting rounds out with a mouthwatering black sesame mochi, courtesy of executive pastry chef Juan Gutierrez, and optional beverage pairings, including extensive sake and wine selections curated by wine director Kat Haw
