What’s Cooking: Curried Sweet Potato & Lentil Soup

Time: approximately 20 minutes
Serves: 4-6 servings • 1 T olive oil • 1 onion, chopped • 2 garlic cloves, minced • 2 tsp curry powder • 1 tsp fresh ginger, grated • 2 sweet potatoes or 1 butternut squash, peeled and cubed • 1 cup lentils, rinsed (green, red or yellow) • Chopped collards or kale • 4 cups vegetable or chicken broth • 1 can light coconut milk • Salt and pepper to taste
Directions • Heat oil in a large pot and sauté onion, garlic, ginger and curry powder until fragrant. • Add the sweet potatoes, lentils, and broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the potatoes are tender. • Stir in the coconut milk and season with salt and p
