A southern Minnesota community is rallying around a food shelf manager and food truck co-owner after she was injured in a crash.

Deisy De Leon Esqueda, 44, of Lake Crystal, was injured in a crash Thursday morning.

According to the Blue Earth County Sheriff’s Office, deputies responded to a head-on crash at around 7:45 a.m. on County Road 9 near 515th Avenue.

Both De Leon Esqueda and the other driver involved were taken to the hospital with non-life-threatening injuries. De Leon Esqueda suffered chest and leg fractures, in addition to "many cuts and bruises," according to a GoFundMe.

The GoFundMe says De Leon Esqueda is the manager at the Mankato Echo Food Shelf and a co-owner of the On Every Corner food truck, which serves the Mankato area.
