WATERTOWN, Connecticut —

It’s not often an invasive species ends up as the special of the day, but here in Connecticut , the European Green Crab has done just that.

The crab is one of Long Island Sound’s most aggressive species. They’re capable of destroying the habitat and fighting other species for food, all while having the very few predators.

There have been attempts to regulate the population, but some business owners say eating them might be the most effective effort to date.

"They have this super rich intense crab flavor. It’s unbelievable how little effort there is to make it taste like crab,” said Zach Redin, owner of To the Gills in Oakville.

Going from invading the Sound to now invading the kitchen, European Green Crabs are making their way to menus across Connecticut.
