Sticky Date Pudding

175 g pitted Medjool dates, finely chopped 375ml plant-based milk

1 tsp vanilla extract

100g plant-based butter 100g brown sugar

225g self raising flour 1 tsp baking powder

1 tsp ground cinnamon

1 tsp ground ginger

½ tsp ground nutmeg

½ tsp salt

Butterscotch sauce

125g plant-based butter

120g brown sugar

1 tbs maple syrup

1 tbs bourbon whiskey

125ml coconut cream

Custard

40g cornflour

375ml plant-based milk

400g can coconut milk

110g caster sugar

2 tsp vanilla extract

Pinch ground turmeric

80g plant-based butter

Method

Preheat oven to 180C. Grease a 20cm square cake pan. Line base and sides with baking paper.
