12 cubes sharp Cheddar cheese

1–2 jalapeños, cored and (¼-inch) sliced

1½ cups shredded Cheddar cheese, divided

½ cup shredded Mozzarella cheese

½ cup shredded Parmesan cheese

8 ounces cream cheese, at room temperature

½ cup mayonnaise

¼ cup minced garlic

½ cup chopped fresh chives

1½ tsps kosher salt
